Avocado Chicken Salad!
2 chicken breasts, cut in cubes
2 small or 1 large avocado
2 tbsp avocado oil
¼ red onion, chopped
juice of 1 lime
a handful of cilantro, chopped
S&P to taste
1 tsp cumin
Heat avocado oil over medium heat. Add the onion and cook until tender
Add in the chicken and cook and until done. Add the cumin and S&P
In a bowl, mash the avocado and add in the lime juice & cilantro.
Add in the chicken mixture and place in fridge
Cut your cucumbers in half long ways, and scoop out some of the center
When ready to serve, place your chicken salad in the cucumber boats and top with more cilantro and lime
*If you like a little spice, top it off with salsa or a drizzle of sriracha
