Roasted Chili/Lime Sweet Potato

1 sweet potato cut half lengthwise

2 tsp olive oil

1 TBSP liquid honey

1/2-1 tsp of chili powder

1/2-1 tsp paprika

1/2-1 tsp cayenne (optional)

Salt & pepper

1 lime halved

Preheat oven to 400

Brush each sweet potato halve with olive oil w/skin

Season the entire sweet potato with salt & pepper

Score the top halves (the meat) with a knife or fork

Season each top halve with chili powder, paprika and cayenne

Bake for 20 mins at 400 degrees

Remove from oven and drizzle the top halves with honey

Place back in the oven and bake for another 10 minutes

Once the sweet potatoes are tender, remove from oven

Squeeze fresh lime juice over and dig in!
