Mexican Filler…4 ways!

1 lb. lean ground turkey or chicken

1/2 onion, chopped

1 red bell pepper, chopped

1 can organic black beans, rinsed/drained

1 cup frozen corn, thawed

a bunch of cilantro/chopped

1 cup salsa (here’s my favorite..NO preservatives, all real ingredients)

1 tsp avocado or olive oil

Cumin, S&P to taste

Heat a large saucepan over medium low heat w/the oil and sauté the onion and bell pepper until soft. Add in the ground meat and cook until no longer pink. Add in black beans, corn, cilantro, salsa, and seasonings. Let cook for 10 minutes or longer to mesh all the flavors. Taste and add anything you wish. You can put this mixture in taco shells, wrap in burritos & bake them, make a stack with nacho chips & guacamolé, place in a to-go container over some rice or lunch, or layer it in a casserole dish with corn tortillas and bake on 375 for 15 minutes. This is one of our favorites!
