Brussel Sprouts/Quinoa Salad

1 pound brussels sprouts, rinsed and ends trimmed, then halved lengthwise and thinly sliced crosswise (or throw them in a food processor and chop)

 2 cups rinsed, cooked quinoa

 1 cup dried cranberries

 2/3 cup chopped pecans, toasted

DRESSING:

1/4 cup freshly-squeezed orange juice

1/4 cup avocado or olive oil

2 tablespoons apple cider vinegar


1. Toss all salad ingredients in a large bowl

2. Whisk the dressing ingredients in a dish
