Instructions


Preheat oven to 375°F. Line a small baking sheet with parchment paper. In a small mixing bowl, add the pecans, sea salt, 1/2 the coconut sugar, 1/2 the melted coconut oil, and 1/2 the cinnamon. Mix well and place on the small baking sheet. Cook for 10 minutes. Set aside.

In a small bowl, mix the oats with cinnamon, the other 1/2 of coconut oil, and 1/2 the coconut sugar. Set aside.

In another small bowl add the maple syrup with the pumpkin pie spice. Whisk until well combined. Set aside.

Cut the pears in half lengthwise and scoop out the larger end where the seeds are to form a small bowl. Cut a small sliver off the back of the larger end so the pears lie flat in a baking dish.

Place 3 cranberries in each pear hole. When the pecans are done roasting, top each pear with some pecans. Now top each pear half with the oats mixture and drizzle 1/2 with the maple syrup mixture reserving the other 1/2.

Bake for 30 minutes. Every 10 minutes, drizzle more maple syrup mixture over each pear half.

These taste lovely alone or you can add non-dairy whip. Enjoy!
