Instructions

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. In a large bowl, add the oats, oat flour, baking powder, hemp seeds, chia seeds, flax seeds, dried fruit, salt, and cinnamon. Mix with a spatula until combined.

Add the mashed banana, maple syrup, vanilla, almond extract, melted coconut oil, and non-dairy milk to the dry ingredients and mix well. Let everything sit for 5 minutes; giving the chia seeds time to expand and relax.

Using clean and slightly damp hands, or a cookie scoop, form the dough into large cookies, about two tablespoons per cookie. Place on the baking sheet.

Press each one down as they won't cook through if you don't. Bake in the oven for 14 minutes, or until cookies are golden brown.

Allow them to cool on the baking sheet for five minutes before moving them to a cooling rack. Enjoy!
