Pink Hummus

Instructions


After your beet has been roasted and cooled, place everything in a high-speed blender until smooth.

You can use this as a spread or a dip

Add water to thin it for a dressing

Ingredients

 

1 Beet (peeled & roasted)
1/4 cup Extra Virgin Olive Oil
1 tbsp Raw Honey
1 Lemon (Juice & zest)
2 tbsp Tahini
3 tbsp Apple Cider Vinegar
2 cups Chickpeas (1 can drained and rinsed)
1 Garlic Clove
1 Jalapeno Pepper (deseeded)
1 tsp Sea Salt & Black Pepper (to taste)
