Instructions
Once you have your cauliflower cut into chunks (you can also buy bagged florets), place them in a food processor with the remaining ingredients except for the parsley. Pulse until all the pieces are roughly the same size and mimic "rice" size.
Place a pan over the stove on low heat and spray it with avocado oil cooking spray. Once hot, add your seasoned cauliflower rice and sauté on low for 5-6 minutes. Be sure to stir it a few times. Toss in the parsley and enjoy!
Remember...you can always change up the spices/flavors. Have fun experimenting!
